  • 1 tablespoon Honey Or maple syrup, optional.
  • 1 teaspoon Dijon Mustard Yellow mustard can work in a pinch.

Method
 

Preparation
  1. Peel and shred carrots, core and julienne apples, and chop celery. Arrange all in a large bowl.
  2. In the same bowl, add shredded carrots, julienned apples, chopped celery, cranberries, nuts, and parsley. Mix well.
  3. In a small bowl, whisk together orange juice, Greek yogurt, mayonnaise, honey, and Dijon mustard until smooth.
  4. Pour the dressing over the salad mixture and toss gently until coated.
  5. Refrigerate for at least 15 minutes before serving.
