- In a mixing bowl, combine sugar, toasted sesame seeds, crushed garlic, and chopped green onions. Pour in soy sauce, rice vinegar, chili oil, and sesame oil. Whisk until the sugar is fully dissolved to create a marinade.
- Trim the ends off the cucumbers. Place one between a pair of chopsticks and make diagonal cuts along the cucumber, then slice perpendicularly to create spiral pieces.
- Transfer the spiraled cucumbers to a bowl, sprinkle generously with salt, and massage for about 2 minutes. Allow to rest for 8-10 minutes.
- Rinse the cucumbers under cold water, drain well, and mix with the marinade. Toss gently to coat.
