- Preheat your oven to 180°C (350°F) and set out your baking dish.
- Season cod fillets with salt and pepper on all sides.
- In a skillet, heat olive oil over medium heat. Sauté onion until translucent, about 4-5 minutes. Add garlic and ginger, cooking until fragrant.
- Stir in coconut milk, lemon juice, and lemon zest. Simmer for 3-4 minutes.
- Place seasoned cod in a greased baking dish and pour the sauce over it.
