Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and set out your baking dish.
  2. Season cod fillets with salt and pepper on all sides.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, about 4-5 minutes. Add garlic and ginger, cooking until fragrant.
  4. Stir in coconut milk, lemon juice, and lemon zest. Simmer for 3-4 minutes.
  5. Place seasoned cod in a greased baking dish and pour the sauce over it.
  6. Bake in the oven for 20-25 minutes until cod flakes easily with a fork.
  7. Let the dish rest for a few minutes, then garnish with cilantro or parsley before serving.
