Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and allow about 10 minutes for it to fully heat up.
  2. Rinse the baby potatoes under cold water, then cut them in halves or quarters and set them aside in a large mixing bowl.
  3. In the mixing bowl, add halved cherry tomatoes, olive oil, minced garlic, oregano, salt, and black pepper. Toss until well-coated.
  4. Place block of feta cheese in the center of the baking dish, pour a little olive oil over it, and surround it with the potato and tomato mixture.
  5. Bake for about 35-40 minutes, stirring halfway through for even roasting until golden brown and tender.
  6. Allow to cool, then gently mix the melted feta into the potatoes and tomatoes. Garnish with fresh basil or parsley before serving.
