- Preheat your oven to 400°F (200°C) and allow about 10 minutes for it to fully heat up.
- Rinse the baby potatoes under cold water, then cut them in halves or quarters and set them aside in a large mixing bowl.
- In the mixing bowl, add halved cherry tomatoes, olive oil, minced garlic, oregano, salt, and black pepper. Toss until well-coated.
- Place block of feta cheese in the center of the baking dish, pour a little olive oil over it, and surround it with the potato and tomato mixture.
- Bake for about 35-40 minutes, stirring halfway through for even roasting until golden brown and tender.
- Allow to cool, then gently mix the melted feta into the potatoes and tomatoes. Garnish with fresh basil or parsley before serving.
