  • 1 lb Salmon fresh or canned
  • 1 cup Breadcrumbs panko recommended
  • 1/2 cup Parmesan Cheese grated or shredded
  • 1 large Egg acts as a binder
  • 1/4 cup Parsley freshly chopped
  • 2 cloves Minced Garlic or garlic powder to taste
  • 1 tbsp Lemon Juice lime juice can be substituted
  • to taste Salt
  • to taste Pepper
For the Creamy Avocado Sauce
  • 1 large Avocado ripe for best texture
  • 1/2 cup Greek Yogurt or sour cream

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine chopped salmon, breadcrumbs, Parmesan, egg, parsley, garlic, lemon juice, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake the meatballs in the oven for 15-18 minutes until golden brown and firm to the touch.
  5. While the meatballs bake, blend avocado, Greek yogurt, lime juice, and garlic in a blender until smooth.
  6. Serve the meatballs warm with the creamy avocado sauce for dipping.
