  • 4 ears Corn Grilled
  • 1 15 oz can Black Beans Drained and rinsed
  • 1 Avocado Pitted and sliced
For the Dressing
  • 0.33 cups Light Ranch Dressing Or Greek yogurt as a substitute
  • 3 Tbsp Buttermilk Or milk with a splash of vinegar as alternative

Method
 

Preparation Steps
  1. In a large bowl or resealable bag, combine the cubed chicken breasts with BBQ sauce and marinate for about 20 minutes.
  2. Preheat your grill to medium-high heat (350-400°F).
  3. Thread marinated chicken onto wooden skewers, spacing pieces evenly.
  4. Grill chicken skewers for 15-18 minutes, turning occasionally and basting with leftover marinade.
  5. Grill the corn for about 10-12 minutes until charred and tender.
  6. Cool grilled corn slightly and then cut kernels off the cob.
  7. Combine ranch dressing, buttermilk, and BBQ sauce in a bowl, whisk until creamy.
  8. Toss lettuce with most of the dressing, then add tomatoes, black beans, and avocado.
  9. Top salad with grilled chicken skewers and drizzle with remaining dressing before serving.
