  • 1 pound sweet potatoes diced
  • 2 cups cooked chicken shredded
  • ¾ cup BBQ sauce your favorite brand
  • 1 medium red onion chopped
  • 1 cup corn frozen or canned
  • 1 cup cheddar cheese shredded
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons green onions chopped, for garnish

Method
 

Directions
  1. Heat the oil by heating 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Sauté sweet potatoes by adding 1 pound of diced sweet potatoes and sauté for about 10 minutes.
  3. Incorporate red onion and corn by stirring in 1 chopped red onion and 1 cup of corn; cook for an additional 3-4 minutes.
  4. Add cooked chicken and BBQ sauce by folding in 2 cups of cooked chicken and ¾ cup of BBQ sauce; toss to coat.
  5. Melt the cheese by sprinkling 1 cup of shredded cheddar cheese over the mixture; cover and let sit for 2-3 minutes.
  6. Serve and garnish by removing the lid and serving hot; garnish with chopped green onions.
