- Heat the oil by heating 2 tablespoons of olive oil in a large skillet over medium heat.
- Sauté sweet potatoes by adding 1 pound of diced sweet potatoes and sauté for about 10 minutes.
- Incorporate red onion and corn by stirring in 1 chopped red onion and 1 cup of corn; cook for an additional 3-4 minutes.
- Add cooked chicken and BBQ sauce by folding in 2 cups of cooked chicken and ¾ cup of BBQ sauce; toss to coat.
- Melt the cheese by sprinkling 1 cup of shredded cheddar cheese over the mixture; cover and let sit for 2-3 minutes.
- Serve and garnish by removing the lid and serving hot; garnish with chopped green onions.
