Preparation
- In a small bowl, whisk together freshly squeezed lemon juice and kosher salt until dissolved. Gradually drizzle in extra-virgin olive oil while whisking continuously.
- Chop roasted or canned beets into bite-sized pieces and place in a mixing bowl. Pour half of the dressing over and let marinate for at least 15 minutes.
- Gently fold in sliced cucumber, crumbled feta cheese, and freshly chopped dill. Drizzle remaining dressing on top.
- Gently toss all ingredients together until evenly mixed. Serve immediately or chill slightly.
