- Crush 1/3 cup of freeze-dried blueberries into a fine powder and set aside.
- Melt in a saucepan 1 cup of white chocolate chips, 2 tablespoons of unsalted butter, and 4 ounces of cream cheese over low heat, stirring until smooth.
- Remove from heat and stir in 2 tablespoons of lemon juice, 1 teaspoon of lemon zest, 1 teaspoon of vanilla extract, and a pinch of salt.
- In a large mixing bowl, combine 6 cups of Rice Chex and drizzle the melted mixture over it. Fold until evenly coated.
- Add the crushed blueberries to the cereal mixture and transfer into a gallon-sized zip-top bag. Sprinkle 1 cup of powdered sugar in, seal, and shake to coat.
- Spread the mixture on a baking sheet and allow to cool for about 10 minutes before serving.
