Ingredients
  

Salad Base
  • 2 cups Super Greens Mix A blend of baby spinach and arugula
  • 1 cup Kale Roughly chopped
  • 1 cup Strawberries Freshly sliced
  • 1 cup Blackberries Ensure they are ripe
  • 1 cup Blueberries Juicy
  • 1/4 cup Pistachios Roughly chopped
  • 1/4 cup Pepitas
  • 1/2 cup Blueberry Goat Cheese Or regular goat cheese if needed
Creamy Dressing
  • 1 cup Plain Greek Yogurt
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Mustard Your choice (yellow or Dijon)
  • 1/4 cup Extra Virgin Olive Oil High-quality
  • 1 tablespoon Fresh Mint Leaves
  • 1 tablespoon Fresh Parsley Leaves
  • 1 tablespoon Fresh Oregano Leaves
  • to taste Coarse Salt & Black Pepper Essential for seasoning

Method
 

Preparation
  1. Add plain Greek yogurt, fresh lemon juice, mustard, and extra virgin olive oil to a blender. Blend on medium speed for about 30 seconds.
  2. Add fresh mint, parsley, and oregano to the blender. Blend for another 10 seconds.
  3. Season with coarse salt and black pepper to taste.
Salad Assembly
  1. Chop kale and rinse super greens mix. Slice strawberries and wash blackberries and blueberries.
  2. In a large bowl, combine super greens mix, kale, strawberries, blackberries, and blueberries. Drizzle with creamy dressing.
  3. Sprinkle pistachios and pepitas over the top. Gently toss to combine.
  4. Crumble blueberry goat cheese over the salad. Toss gently to mix.
  5. Transfer to serving dish and garnish with additional black pepper.
