Preparation
- Add plain Greek yogurt, fresh lemon juice, mustard, and extra virgin olive oil to a blender. Blend on medium speed for about 30 seconds.
- Add fresh mint, parsley, and oregano to the blender. Blend for another 10 seconds.
- Season with coarse salt and black pepper to taste.
Salad Assembly
- Chop kale and rinse super greens mix. Slice strawberries and wash blackberries and blueberries.
- In a large bowl, combine super greens mix, kale, strawberries, blackberries, and blueberries. Drizzle with creamy dressing.
- Sprinkle pistachios and pepitas over the top. Gently toss to combine.
- Crumble blueberry goat cheese over the salad. Toss gently to mix.
- Transfer to serving dish and garnish with additional black pepper.
