Step‑by‑Step Instructions

  2. Cook the penne or rotini pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and set aside.
  3. Heat olive oil in a large skillet. Add cubed chicken and Cajun seasoning, cooking until browned and cooked through, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add more olive oil if necessary, then sauté diced onion, bell pepper, and minced garlic for 3-4 minutes until fragrant.
  5. Add cream cheese and stir until melted. Gradually mix in heavy cream and chicken broth until smooth.
  6. Stir in shredded cheddar and grated Parmesan until melted. Adjust seasoning if necessary.
  7. Return cooked chicken and add drained pasta; toss gently to coat everything evenly.
