Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Melt the unsalted butter in a large skillet over medium heat. Add diced onion and minced garlic, sauté for 3-4 minutes.
  3. Add seafood mix to the skillet and cook for 3-4 minutes until just cooked through.
  4. Sprinkle flour over the seafood mixture and stir for 1-2 minutes.
  5. Gradually pour in seafood stock, stirring constantly to avoid lumps and allow to simmer.
  6. Stir in heavy cream, Old Bay seasoning, salt, and pepper. Add frozen peas and carrots and simmer for 5-7 minutes. Mix in cheddar cheese until smooth.
  7. Prepare the Cheddar Bay biscuit mix according to the package instructions.
  8. Pour the creamy seafood mixture into a greased baking dish. Spoon the biscuit dough over the top.
  9. Bake for 20-25 minutes until golden brown.
  10. Let cool for a few minutes before serving and garnish with fresh parsley.
