  • 2 cups Cauliflower Rice can substitute with shredded zucchini or cabbage
  • 1 Onion chopped; shallots can be a substitute
  • 1 Bell Pepper diced; can use jalapeño for extra heat
  • 2 cloves Garlic minced
  • 1 can Rotel Diced Tomatoes drained; or regular canned tomatoes
  • 1 packet Taco Seasoning homemade for best flavor control
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • to taste Salt & Pepper
  • 8 ounces Cream Cheese optional
  • 2 cups Shredded Cheese Cheddar or Mexican blend, freshly shredded
For Toppings (Optional)
  • 1/4 cup Chopped Green Onions for garnish
  • 1 cup Sour Cream or Greek yogurt
  • 1 medium Sliced Avocado for garnish

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C). Gather all ingredients for a seamless cooking process.
  2. Brown the ground beef in a large skillet over medium heat for 5-7 minutes. Drain excess grease.
  3. Add chopped onion, bell pepper, and minced garlic to the skillet and sauté for 3-5 minutes until softened.
  4. Stir in taco seasoning, cumin, chili powder, paprika, salt, and pepper. Cook for 1 minute.
  5. Incorporate cauliflower rice and drained Rotel tomatoes into the mixture. Heat through for another 3-5 minutes.
  6. If using cream cheese, mix it in until melted and combined.
  7. Transfer the mix to a greased 9x13 baking dish, spreading it evenly.
  8. Top with shredded cheese, covering the entire mixture.
  9. Bake in the preheated oven for 20-25 minutes until bubbly and golden.
  10. Let the casserole rest for 5-10 minutes, then garnish and serve.
