  • ½ cup unsalted butter room temperature
  • ½ cup brown sugar light or dark
  • ¼ cup white granulated sugar
  • ½ cup Biscoff cookie spread smooth
  • 1 teaspoon pure vanilla extract
  • 1 large egg room temperature
  • ½ cup mini chocolate chips
For the Topping
  • ½ cup Biscoff cookie butter for topping

Method
 

Step-by-Step Instructions
  1. Sift together the flour, baking soda, and salt. Set aside.
  2. Beat the butter, brown sugar, and white sugar together until creamy.
  3. Mix in the Biscoff cookie spread until just combined.
  4. Add vanilla extract and the egg, mixing until smooth.
  5. Fold in the dry ingredients and then the mini chocolate chips.
  6. Chill dough in plastic wrap for 30 minutes.
  7. Preheat oven to 350°F (175°C) and prepare baking sheets.
  8. Scoop dough onto trays, spacing them apart. Bake for 13-15 minutes.
  9. Press a well into each cookie and fill with Biscoff cookie butter.
  10. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
