- Sift together the flour, baking soda, and salt. Set aside.
- Beat the butter, brown sugar, and white sugar together until creamy.
- Mix in the Biscoff cookie spread until just combined.
- Add vanilla extract and the egg, mixing until smooth.
- Fold in the dry ingredients and then the mini chocolate chips.
- Chill dough in plastic wrap for 30 minutes.
- Preheat oven to 350°F (175°C) and prepare baking sheets.
- Scoop dough onto trays, spacing them apart. Bake for 13-15 minutes.
- Press a well into each cookie and fill with Biscoff cookie butter.
- Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
