- Prepare the Chipotle Mayo by whisking together egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Gradually add oil while whisking until emulsified, then stir in smoked paprika and chipotle pepper.
- Cook the Chicken by seasoning both sides with salt and pepper, heating a grill pan over medium heat, and cooking for about 4–5 minutes on each side until the internal temperature reaches 165°F (75°C).
- Assemble the Sandwich by buttering one side of each slice of bread, spreading chipotle mayo on the other side, and layering chicken, bacon, cheddar, and tomatoes.
