Steps to Make Cheesecake
  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted unsalted butter until evenly mixed. Press firmly into the bottom of a springform pan. Bake for about 10 minutes until lightly golden, then cool.
  2. In a large mixing bowl, add softened cream cheese and granulated sugar. Beat on medium speed until smooth, about 2-3 minutes. Gradually mix in vanilla extract, then add eggs one at a time.
  3. Mix in sour cream, flour, lemon zest, and juice until silky. Pour the filling into the crust and spread evenly. Bake at 325°F (160°C) for about 60 minutes until edges are set and center jiggles slightly.
  4. Turn off the oven and crack the door, allowing cheesecake to cool for about 1 hour to prevent cracking. Transfer to a wire rack to cool completely before refrigerating. Chill for at least 4 hours, preferably overnight.
  5. To serve, run a knife around the edge of the springform pan. Remove the sides and slice using a warm knife, wiping it clean between cuts. Enjoy plain or with toppings.
