- Cut the chicken breasts into 1-inch pieces, season with garlic powder, salt, and pepper, and coat lightly in flour.
- Heat 2 tbsp of olive oil in a deep skillet over medium-high heat. Add half the chicken in a single layer, cooking for about 3-4 minutes per side until golden brown.
- Reduce heat to medium, add 1 tbsp of olive oil and 1 tbsp of butter. Sauté the mushrooms and onion for 6-8 minutes until browned.
- Stir in Dijon mustard, Worcestershire sauce, and minced garlic, cooking for 1 minute.
- Pour in the chicken broth and scrape the bottom of the pan. Add the chicken back in and simmer for 2 minutes.
- Lower heat, stir in sour cream until smooth, adjusting seasoning as needed.
