Ingredients
  

Dressing
  • 1 cup Plain Greek Yogurt substitute with dairy-free yogurt for a vegan option
  • 2 tablespoons Mayonnaise can be omitted or replaced with vegan mayonnaise
  • 2 tablespoons Fresh Lemon Juice use vinegar as an alternative if lemon is unavailable
  • 1 teaspoon Dijon Mustard any mustard can be substituted
  • 1 pinch Kosher Salt reduce if using table salt instead
  • 1 pinch Freshly Ground Black Pepper can be omitted for a milder flavor
Salad
  • 2 cans Chickpeas drained and rinsed; if using dried chickpeas, soak and cook 1 cup to yield the equivalent
  • 2 large English Cucumbers diced; substitute other varieties carefully
  • 1/3 cup Red Onion finely diced; increase or replace with green onions for a milder taste
  • 2 tablespoons Fresh Dill chopped; feel free to substitute with your favorite herbs
  • 2 tablespoons Fresh Parsley chopped; feel free to substitute with your favorite herbs
  • 1/4 cup Feta Cheese optional; omit for vegan versions or substitute with plant-based cheese

Method
 

Dressing Preparation
  1. In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, Dijon mustard, kosher salt, and black pepper. Whisk until smooth.
Salad Preparation
  1. In a large mixing bowl, add chickpeas, cucumbers, and red onion. Toss in dill and parsley, mixing gently.
Combine
  1. Pour the yogurt dressing over the salad ingredients and fold gently until well coated.
Optional Addition
  1. If using, fold in crumbled feta cheese gently.
Chill
  1. Cover the salad with plastic wrap or place it in an airtight container. Refrigerate for at least 15 minutes before serving.
