  • 8 oz Penne Pasta or fusilli/rigatoni as substitutes
For the Proteins
  • 1 lb Boneless Skinless Chicken Breast or turkey
  • 1 lb Shrimp or scallops
  • 6 oz Andouille Sausage or chorizo/kielbasa
For the Vegetables
  • 1 cup Bell Peppers (mixed colors) can use one color or spicy varieties
  • 1 medium Red Onion or yellow onion for milder flavor
  • 2 cloves Garlic (minced) or garlic powder
For the Sauce
  • 1 cup Heavy Cream or half-and-half/non-dairy cream
  • 1/2 cup Parmesan Cheese or Pecorino Romano/nutritional yeast
  • 1 tbl Cajun Seasoning to taste
  • 1 tbl Olive Oil or butter/neutral oil
  • to taste Salt and Pepper adjust for flavor
For the Finishing Touch
  • 2 tbl Chopped Parsley or chives for garnish

Method
 

Step‑by‑Step Instructions
  1. Start by bringing a large pot of salted water to a boil. Add penne pasta and cook for 10-12 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and cook for 4-5 minutes on each side until golden brown. Remove from skillet and keep warm.
  3. In the same skillet, add more oil if necessary. Sauté shrimp for 2-3 minutes until pink and opaque. Transfer to the plate with chicken.
  4. Add andouille sausage to skillet and sauté for 2 minutes. Toss in bell peppers, red onion, and garlic, and cook for 4 minutes until tender.
  5. Pour in heavy cream, stirring to combine. Simmer for 2-3 minutes. Gradually stir in Parmesan cheese and season with salt and pepper.
  6. Add chicken, shrimp, and drained penne back into skillet. Toss gently to coat in sauce. Heat through for 1-2 minutes until warmed.
  7. Remove from heat and garnish with chopped parsley. Serve immediately either plated or family-style.
