- Start by bringing a large pot of salted water to a boil. Add penne pasta and cook for 10-12 minutes until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and cook for 4-5 minutes on each side until golden brown. Remove from skillet and keep warm.
- In the same skillet, add more oil if necessary. Sauté shrimp for 2-3 minutes until pink and opaque. Transfer to the plate with chicken.
- Add andouille sausage to skillet and sauté for 2 minutes. Toss in bell peppers, red onion, and garlic, and cook for 4 minutes until tender.
- Pour in heavy cream, stirring to combine. Simmer for 2-3 minutes. Gradually stir in Parmesan cheese and season with salt and pepper.
- Add chicken, shrimp, and drained penne back into skillet. Toss gently to coat in sauce. Heat through for 1-2 minutes until warmed.
- Remove from heat and garnish with chopped parsley. Serve immediately either plated or family-style.
