Method
 

Step-by-Step Instructions
  1. Wash and peel potatoes, then chop into small, equal pieces.
  2. Finely chop the onion and gather the fresh dill.
  3. In a pot, heat oil over medium heat and sauté onions until translucent.
  4. Add potatoes to the pot and pour in stock until covered. Bring to a boil.
  5. Reduce heat to low, cover, and simmer until potatoes are fork-tender.
  6. Blend the soup until smooth and creamy.
  7. Stir in cream and dill, heating gently.
  8. Ladle into bowls and serve warm, garnished with fresh dill.
