  • 2 cups frozen petite peas thawed and drained
  • 4 large eggs hard-boiled and diced
  • 6 oz bacon cooked until crispy
  • 1 small onion finely diced
  • 1 cup celery diced
  • 1 cup sharp cheddar cheese shredded
For the Dressing
  • 1 cup mayonnaise rich variety like Hellmann's
  • 1/2 cup sour cream like Daisy for thickness
For Seasoning
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper adjust to taste
  • 1 tsp smoked paprika

Method
 

Preparation Steps
  1. Prepare the eggs by placing them in a saucepan covered with water. Bring to a boil, remove from heat, cover, and let sit for 10 minutes. Transfer to ice bath, cool, peel, and dice.
  2. Cook the bacon in a skillet over medium heat for 8 to 10 minutes until crispy. Drain on paper towels and crumble.
  3. Thaw peas by rinsing under cold water for 2 to 3 minutes. Pat dry to remove excess moisture.
  4. Finely dice the onion and celery into small pieces.
  5. In a small bowl, mix salt, pepper, garlic powder, cayenne, and smoked paprika.
  6. In a large bowl, combine peas, eggs, bacon, onion, celery, and cheddar. Add seasoning mix and toss gently.
  7. In another bowl, whisk together mayonnaise and sour cream. Fold dressing into salad mixture and chill for at least 2 hours.
