- Begin by washing and drying the zucchini. Slice them into sticks approximately 1/4 inch thick.
- In a resealable plastic bag or a bowl, add a generous amount of all-purpose flour. Add the zucchini sticks and shake to coat evenly.
- In a medium bowl, combine the panko crumbs, grated Parmesan cheese, Italian seasoning, garlic powder, and a pinch of salt. Mix thoroughly.
- In a separate bowl, crack the eggs and add a splash of water. Whisk everything together until well blended.
- Dip each zucchini stick into the egg mixture, then roll it in the panko mixture, pressing gently to help the coating adhere.
- Preheat your air fryer to 350°F (175°C). Arrange the coated zucchini fries in a single layer in the air fryer basket.
- Air fry for 7-12 minutes, shaking the basket halfway through until the fries are golden brown and crispy.
- Once cooked, remove the zucchini fries from the air fryer and let them cool for a minute. Serve warm with your choice of marinara sauce for dipping.
