  • 1 cup dried cranberries or fresh for a tart twist
  • 1 cup shredded carrots
  • 1/2 cup sliced almonds or sunflower seeds for a nut-free option
For the Dressing
  • 1 cup mayonnaise or Greek yogurt for a lighter version
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup for a vegan alternative
  • 1 tablespoon Dijon mustard or yellow mustard in a pinch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Instructions
  1. In a large mixing bowl, add the shredded green cabbage, thinly sliced apple, dried cranberries, shredded carrots, and optional sliced almonds. Toss gently to combine.
  2. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
  3. Pour the dressing over the slaw mixture and gently fold everything together with a spatula.
  4. Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Once chilled, stir again and serve in a large bowl.
