Step-by-Step Instructions
  1. In a medium bowl, blend together the large shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Allow to marinate for about 10 minutes.
  2. Prepare a shallow bowl of cornstarch. Dredge each marinated shrimp in cornstarch and shake off excess. Place on a baking sheet in a single layer.
  3. In a large pot, heat 1½ inches of oil over medium-high heat until it reaches 350°F. Use a thermometer to monitor the temperature.
  4. Add the coated shrimp in batches to the hot oil, frying for about 2 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
  5. In a separate bowl, combine mayonnaise, Thai sweet chili sauce, and Sriracha hot sauce, stirring until well mixed.
  6. Once all shrimp are fried, add them to the bowl with the sauce and gently toss until evenly coated.
