- In a medium bowl, blend together the large shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Allow to marinate for about 10 minutes.
- Prepare a shallow bowl of cornstarch. Dredge each marinated shrimp in cornstarch and shake off excess. Place on a baking sheet in a single layer.
- In a large pot, heat 1½ inches of oil over medium-high heat until it reaches 350°F. Use a thermometer to monitor the temperature.
- Add the coated shrimp in batches to the hot oil, frying for about 2 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
- In a separate bowl, combine mayonnaise, Thai sweet chili sauce, and Sriracha hot sauce, stirring until well mixed.
- Once all shrimp are fried, add them to the bowl with the sauce and gently toss until evenly coated.
