Ingredients

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Dill pickle juice Refrigerated brands like Claussen or Grillo’s recommended
For the Coating
  • 1 cup All-purpose flour Can use gluten-free flour as a substitute
  • 2 large Eggs Can substitute with buttermilk or a milk-vinegar mixture
  • 1 cup Seasoned breadcrumbs Panko is preferred for extra crunch
  • 0.5 cup Grated Parmesan cheese Freshly grated Parmigiano-Reggiano offers the best taste
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt Adjust to taste
  • 0.5 teaspoon Pepper Adjust to taste
For Cooking
  • 0.5 cup Cooking oil Can use less oil for baking or air-frying

Equipment

  • Large skillet
  • Shallow Dishes
  • Resealable Bag

Method

Step-by-Step Instructions
  1. Begin by placing the boneless, skinless chicken breasts in a resealable bag or shallow dish. Pour in enough dill pickle juice to fully submerge the chicken, then seal or cover tightly. Refrigerate for 30 minutes to 2 hours.
  2. While the chicken is marinating, set up your breading stations. In the first shallow dish, combine all-purpose flour with garlic powder, onion powder, paprika, salt, and pepper.
  3. In a second dish, whisk two large eggs until well blended. Finally, mix seasoned breadcrumbs with grated Parmesan cheese in a third dish.
  4. Once the marinating time is complete, remove the chicken from the brine and gently pat it dry with paper towels. Dredge the chicken in the flour mixture, dip it into the eggs, and then coat it with the breadcrumb mixture.
  5. In a large skillet, heat enough cooking oil over medium-high heat until it reaches approximately 350°F. Fry the coated chicken breasts for 5-7 minutes on each side until golden-brown and reaching an internal temperature of 165°F.
  6. Transfer the chicken to a wire rack set over a baking sheet to drain excess oil. Let the chicken rest for about 3-5 minutes before serving.

Notes

Aim for marinating the chicken between 1-2 hours to avoid overly salty chicken. Use a thermometer to maintain oil temperature around 350°F for best results. Refrigerate leftovers in an airtight container for up to 4 days and reheat for crispiness.
