- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Rinse and trim the Brussels sprouts, slicing each in half.
- In a large mixing bowl, combine Brussels sprouts, olive oil, minced garlic, salt, black pepper, and smoked paprika. Toss until evenly coated.
- Transfer the Brussels sprouts to the baking sheet, cut side down, in a single layer.
- Roast in the preheated oven for 20–25 minutes, flipping halfway through.
- During the last 5 minutes, sprinkle Parmesan cheese over the sprouts and return to the oven to melt.
- Optional: Drizzle with balsamic vinegar and garnish with parsley before serving.
