Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Rinse the Brussels sprouts under cool water, trim the stems, and pat dry.
  3. In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, salt, black pepper, and smoked paprika.
  4. Spread the Brussels sprouts on the baking sheet in a single layer, cut side down.
  5. Roast in the oven for 20-25 minutes, flipping halfway through.
  6. In the last 5 minutes of roasting, sprinkle freshly grated Parmesan cheese over the sprouts.
  7. Remove from oven, drizzle with balsamic vinegar if desired, and garnish with parsley.
