- In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, salt, black pepper, and smoked paprika.
- Spread the Brussels sprouts on the baking sheet in a single layer, cut side down.
- Roast in the oven for 20-25 minutes, flipping halfway through.
- In the last 5 minutes of roasting, sprinkle freshly grated Parmesan cheese over the sprouts.
- Remove from oven, drizzle with balsamic vinegar if desired, and garnish with parsley.
