Preparation Steps
- Wash and scrub the potatoes under cold water. Peel if desired and cut into 1 to 1.5-inch wedges or 1-inch chunks.
- Soak the cut potatoes in a bowl of cold water for 30 to 60 minutes to remove excess starch.
- Preheat your oven to 400°F (200°C) while the potatoes are soaking.
- In a large mixing bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
- Add the dried potato pieces to the bowl with the marinade and toss thoroughly until each piece is coated.
- Spread the marinated potatoes in a single layer on a baking sheet.
- Roast the potatoes for 20 to 25 minutes, until the edges start turning golden.
- After the first roasting phase, flip the potatoes and pour the broth around them.
- Continue roasting for an additional 25 to 35 minutes, flipping every 10 to 15 minutes.
- If desired, increase the oven temperature to 425°F (220°C) for the last 10 to 15 minutes.
- Let the potatoes rest in the pan for 5 to 10 minutes and garnish with fresh parsley or oregano before serving.
