Preparation Steps
  1. Wash and scrub the potatoes under cold water. Peel if desired and cut into 1 to 1.5-inch wedges or 1-inch chunks.
  2. Soak the cut potatoes in a bowl of cold water for 30 to 60 minutes to remove excess starch.
  3. Preheat your oven to 400°F (200°C) while the potatoes are soaking.
  4. In a large mixing bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  5. Add the dried potato pieces to the bowl with the marinade and toss thoroughly until each piece is coated.
  6. Spread the marinated potatoes in a single layer on a baking sheet.
  7. Roast the potatoes for 20 to 25 minutes, until the edges start turning golden.
  8. After the first roasting phase, flip the potatoes and pour the broth around them.
  9. Continue roasting for an additional 25 to 35 minutes, flipping every 10 to 15 minutes.
  10. If desired, increase the oven temperature to 425°F (220°C) for the last 10 to 15 minutes.
  11. Let the potatoes rest in the pan for 5 to 10 minutes and garnish with fresh parsley or oregano before serving.
