Step-by-Step Instructions
  1. Begin by washing the potatoes thoroughly under cold water. Peel if desired and cut into wedges or 1-inch chunks.
  2. Soak the cut potatoes in cold water for 30 to 60 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. In a large bowl, combine lemon juice, olive oil, minced garlic, oregano, salt, and pepper. Mix well.
  5. Toss the potato pieces in the marinade until evenly coated.
  6. Spread the marinated potatoes on a baking sheet in a single layer.
  7. Roast for 20 to 25 minutes without disturbing.
  8. Carefully remove the baking sheet and flip the potatoes over. Pour the broth around them.
  9. Return the baking sheet to the oven for an additional 25 to 35 minutes, flipping every 10 to 15 minutes.
  10. Once done, let them rest for 5 to 10 minutes before garnishing with parsley or oregano.
