  • 2 cups Zucchini Grated for moisture and bulk

  • 1 tablespoon Spearmint Fresh or dried

  • 1 cup Feta Cheese Crumbled
  • 1 cup Self-Raising Flour Or gluten-free flour
For Frying
  • 1 cup Vegetable Oil Use a mix of sunflower and olive oil
For the Yogurt Dip
  • 1 cup Greek Yogurt Add garlic for extra flavor
  • 1 tablespoon Fresh Dill Or dried dill if needed
  • 1 tablespoon Lemon Juice Adds tanginess

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine Greek yogurt, fresh dill, and lemon juice. Stir well and refrigerate.
  2. Grate zucchini and sprinkle with salt. Set aside for about 30 minutes.
  3. Squeeze grated zucchini using a clean kitchen towel to remove excess moisture.
  4. In a mixing bowl, combine squeezed zucchini, eggs, green onions, onion, spearmint, dill, feta, and flour. Mix until well combined.
  5. Heat vegetable oil in a frying pan over medium-high heat until it reaches 170°C (340°F).
  6. Drop spoonfuls of mixture into the oil, frying in batches of 5-6. Cook until golden brown and crispy.
  7. Transfer fried fritters to a paper towel-lined plate to drain excess oil. Serve immediately with yogurt dip.
