- In a small bowl, combine Greek yogurt, fresh dill, and lemon juice. Stir well and refrigerate.
- Grate zucchini and sprinkle with salt. Set aside for about 30 minutes.
- Squeeze grated zucchini using a clean kitchen towel to remove excess moisture.
- In a mixing bowl, combine squeezed zucchini, eggs, green onions, onion, spearmint, dill, feta, and flour. Mix until well combined.
- Heat vegetable oil in a frying pan over medium-high heat until it reaches 170°C (340°F).
- Drop spoonfuls of mixture into the oil, frying in batches of 5-6. Cook until golden brown and crispy.
- Transfer fried fritters to a paper towel-lined plate to drain excess oil. Serve immediately with yogurt dip.
