  • 6 tbsp Vegetable Oil Plus as needed for frying.

Step-by-Step Instructions
  1. In a large mixing bowl, combine the well-drained tuna, minced garlic, dried parsley, and dill. Add chopped red onions, lemon juice, lemon zest, mayonnaise, and lightly beaten eggs. Stir in the parmesan cheese and panko breadcrumbs along with salt, pepper, and onion powder until fully integrated.
  2. Using a 1/4 measuring cup, scoop a portion of the mixture and mold it into a patty, roughly 1-inch thick. Coat each side with additional panko breadcrumbs.
  3. Heat 6 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Carefully place the patties in the hot skillet and flatten slightly. Cook for 3-4 minutes on one side until golden brown, then flip and cook 3-4 minutes on the other side.
  5. Transfer the cooked patties onto a plate lined with paper towels to drain excess oil. Serve warm alongside coleslaw or green salad.
