- Make Remoulade Sauce by mixing your favorite ingredients in a bowl and chill in the refrigerator.
- Preheat your oven to 375°F (190°C). Place salmon on a lined baking sheet, drizzle with oil, and season. Bake for 15-20 minutes until cooked through.
- Melt butter in a skillet over medium-low heat. Add shallots and sauté until translucent, then stir in garlic and cook for an additional minute.
- In a mixing bowl, add flaked salmon, mashed potatoes, breadcrumbs, and the sautéed shallots and garlic. Add Old Bay and Dijon mustard, mix well and shape into croquettes.
- Heat oil in a frying pan over medium-high heat until it reaches 375°F. Fry croquettes for 2-3 minutes per side until golden brown.
- Garnish with fresh parsley and serve hot alongside the remoulade sauce for dipping.
