  • 1 pound Salmon Fillet fresh or canned
  • 1/4 cup Neutral Oil Grapeseed, Canola, or Avocado
  • 1 teaspoon Kosher Salt adjust as needed
  • 1/2 teaspoon Black Pepper freshly ground is best
  • 2 tablespoons Unsalted Butter can substitute with oil for dairy-free
  • 1 medium Shallot finely diced
  • 2 cloves Garlic minced
  • 1 cup Leftover Mashed Potatoes or freshly baked potato
  • 1 cup Seasoned Breadcrumbs gluten-free options available
  • 1 tablespoon Old Bay Seasoning or other seafood seasoning blend
  • 1 tablespoon Dijon Mustard yellow mustard works too
  • 2 tablespoons Fresh Parsley optional, for garnish
For the Remoulade Sauce
  • 1 cup Remoulade Sauce or tartar sauce or aioli

Method
 

Step-by-Step Instructions
  1. Make Remoulade Sauce by mixing your favorite ingredients in a bowl and chill in the refrigerator.
  2. Preheat your oven to 375°F (190°C). Place salmon on a lined baking sheet, drizzle with oil, and season. Bake for 15-20 minutes until cooked through.
  3. Melt butter in a skillet over medium-low heat. Add shallots and sauté until translucent, then stir in garlic and cook for an additional minute.
  4. In a mixing bowl, add flaked salmon, mashed potatoes, breadcrumbs, and the sautéed shallots and garlic. Add Old Bay and Dijon mustard, mix well and shape into croquettes.
  5. Heat oil in a frying pan over medium-high heat until it reaches 375°F. Fry croquettes for 2-3 minutes per side until golden brown.
  6. Garnish with fresh parsley and serve hot alongside the remoulade sauce for dipping.
