- Prepare the zucchini by washing, trimming, grating, and squeezing out excess moisture.
- Mix the batter by combining drained zucchini, beaten eggs, oat or almond flour, minced garlic, salt, pepper, herbs, and optional ingredients.
- Heat a non-stick skillet on medium and add olive oil. Wait until shimmering.
- Shape the fritters into patties and place them in the skillet without overcrowding.
- Cook for 3–4 minutes until golden brown, then flip.
- Cook for an additional 2–3 minutes on the other side until golden.
- Remove fritters and drain on paper towels to absorb excess oil.
- Serve warm with Greek yogurt or tzatziki.
