  • 2 medium Zucchini Squeezed to remove excess water
  • 2 Eggs Beaten
  • 1 cup Oat Flour or Almond Flour Oat flour for heartier texture, almond flour for lower-carb option
  • 1/4 cup Grated Parmesan Cheese Optional
  • 1/2 cup Plain Greek Yogurt or Cottage Cheese For creaminess and protein
  • 2 cloves Garlic Minced
  • 1 teaspoon Sea Salt Adjusted to taste
  • 1/2 teaspoon Black Pepper Adjusted to taste
  • 1 teaspoon Dried Oregano or Thyme Or fresh herbs for better flavor
  • 1/4 cup Fresh Parsley or Dill Chopped

Method
 

Cooking Instructions
  1. Prepare the zucchini by washing, trimming, grating, and squeezing out excess moisture.
  2. Mix the batter by combining drained zucchini, beaten eggs, oat or almond flour, minced garlic, salt, pepper, herbs, and optional ingredients.
  3. Heat a non-stick skillet on medium and add olive oil. Wait until shimmering.
  4. Shape the fritters into patties and place them in the skillet without overcrowding.
  5. Cook for 3–4 minutes until golden brown, then flip.
  6. Cook for an additional 2–3 minutes on the other side until golden.
  7. Remove fritters and drain on paper towels to absorb excess oil.
  8. Serve warm with Greek yogurt or tzatziki.

Notes
