Ingredients
  

For the Salad
  • 5 ounces Fresh Spinach or Spring Greens or mixed greens or kale for a heartier option
  • 2 small Apples Honeycrisp or Granny Smith recommended
  • ¼ whole Red Onion thinly sliced and soaked in ice water
  • ½ cup Pecan Halves toasted
  • cup Feta Crumbles or goat cheese as a substitute
  • ½ cup Dried Cranberries or dried cherries or raisins for variety
For the Dressing
  • 2 tablespoons Vegetable Oil olive oil can be used for a richer taste
  • 2 tablespoons Apple Cider Vinegar for essential acidity
  • 2 tablespoons Maple Syrup for sweetness
  • 1 teaspoon Dijon Mustard to emulsify
  • ¼ teaspoon Garlic Powder optional
  • Salt to taste
  • Black Pepper to taste

Method
 

Preparation
  1. Soak thinly sliced red onion in ice water for about 10 minutes to mellow sharpness. Drain and set aside.
  2. In a large mixing bowl, combine the spinach, sliced apples, soaked red onion, toasted pecans, feta crumbles, and dried cranberries. Toss gently.
  3. In a mason jar, combine vegetable oil, apple cider vinegar, maple syrup, Dijon mustard, garlic powder, salt, and black pepper. Seal and shake vigorously for about 30 seconds.
  4. Pour the vinaigrette over the salad mixture and toss gently to coat all ingredients evenly.
  5. Transfer the salad to a serving bowl or platter and serve immediately.
