Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with cooking spray.
  2. Bring water to a boil in a large pot, add the broccoli florets and blanch for 2 minutes. Drain and dry thoroughly.
  3. In a mixing bowl, combine the blanched broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well-blended.
  4. Roll the mixture into golf-ball-sized portions and flatten slightly into patties. Place on the baking sheet, spaced apart.
  5. Brush the tops with olive oil for a golden crust.
  6. Bake for 20-25 minutes until golden-brown. Check for doneness visually.
  7. Allow to cool for about 5 minutes before serving warm with your favorite dipping sauces.
