Method
 

Preparation Steps
  1. Trim both ends of the English cucumber, slice in half lengthwise, and cut into ¼-inch half moons.
  2. Halve the grape or cherry tomatoes and set aside.
  3. Thinly slice the red onion.
Mix Salad
  1. In a medium bowl, toss together cucumber, tomatoes, and onion.
Make Dressing
  1. Whisk together olive oil, red wine vinegar, honey, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss gently to coat.
Add Herbs (Optional)
  1. Stir in chopped herbs if using.
Chill
