  • 1 cup Sausage (pork or turkey) Try chicken sausage or plant-based variety for a lighter meal.
  • 2 cups Greens (kale, spinach, etc.) Consider adding peppers or zucchini for extra veggies.
  • 4 large Eggs Poached or fried, they’re the perfect finishing touch.
For Extra Flavor
  • 2 cloves Garlic Optional, can substitute with shallots.
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Paprika Optional; smoky paprika adds more flavor.
  • to taste Red Pepper Flakes Optional; adjust based on heat preference.

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, pepper, and optional paprika. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  3. Heat 1/2 tablespoon olive oil in a skillet and sauté garlic for 30 seconds. Add greens and cook for 2-3 minutes until wilted. Season with salt and pepper and set aside.
  4. In the same skillet, add sausage slices and brown for 4-5 minutes until cooked through. Remove from heat.
  5. In a non-stick frying pan, cook eggs over medium-low heat for 3-4 minutes until the whites are set and yolks are runny.
  6. Assemble the bowl by layering sautéed greens, roasted potatoes, browned sausage, and a fried egg on top. Serve warm, optionally sprinkle with red pepper flakes.
