- In a small bowl, whisk together olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, and salt and black pepper to taste.
- Pat the salmon fillets dry and coat each fillet evenly with the marinade. Let sit for about 10 minutes.
- Preheat oven to 400°F (200°C) or grill to medium-high. Cook salmon for 12-15 minutes until it flakes easily.
- Prepare the pineapple salsa by combining pineapple, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and chill.
- Warm tortillas in a dry skillet or microwave.
- Flake cooked salmon into pieces. Assemble tacos with salmon, salsa, and cabbage or lettuce.
