For the Tacos
  • 8 tortillas Tortillas Corn or flour tortillas.
For the Pineapple Salsa
  • 2 cups Pineapple Diced, can substitute with mango.
  • 1/2 cup Red Onion Finely chopped.
  • 1 jalapeño Jalapeño Minced, omit for milder flavor.
  • 1/4 cup Cilantro Chopped, provides freshness.
  • 2 tablespoons Lime Juice Freshly squeezed.
  • 1 cup Cabbage/Lettuce Shredded for crunch.

Method
 

Cooking Instructions
  1. In a small bowl, whisk together olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, and salt and black pepper to taste.
  2. Pat the salmon fillets dry and coat each fillet evenly with the marinade. Let sit for about 10 minutes.
  3. Preheat oven to 400°F (200°C) or grill to medium-high. Cook salmon for 12-15 minutes until it flakes easily.
  4. Prepare the pineapple salsa by combining pineapple, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and chill.
  5. Warm tortillas in a dry skillet or microwave.
  6. Flake cooked salmon into pieces. Assemble tacos with salmon, salsa, and cabbage or lettuce.
