  • ¼ cup sour cream or mayonnaise plain yogurt can be a lighter alternative
  • 2 tablespoons fresh dill chopped

For the Sandwiches
  • 8 slices soft sandwich bread white or whole wheat for a healthier twist

Method
 

Preparation Steps
  1. In a medium mixing bowl, combine the whipped cream cheese, sour cream or mayonnaise, fresh dill, and kosher salt. Blend until smooth.
  2. Spread the herbed cream cheese mixture on one side of each slice of bread.
  3. Wash and thinly slice the cucumber, then layer the slices over the cream cheese spread on half of the bread slices.
  4. Top with the other bread slices, spread side down, and press gently to seal.
  5. Trim the crusts and cut each sandwich into quarters for easy serving.
  6. Serve on a platter, optionally garnished with dill sprigs or cucumber slices.
