Step‑by‑Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Prepare the Corn: Grill fresh corn over medium heat, turning occasionally until charred, about 10 minutes. Cut kernels off the cob.
  3. Make the Dressing: Whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, garlic, and seasoning in a mixing bowl.
  4. Combine Ingredients: In a large bowl, mix cooled pasta, charred corn, red onion, cilantro, and cotija cheese. Pour dressing over and toss together.
  5. Chill (Optional): Cover and refrigerate for at least 30 minutes to enhance flavors.
  6. Garnish and Serve: Toss again before serving, garnishing with extra cotija, cilantro, lime wedges, and chili powder.
