Ingredients

For the Bites
  • 1 cup Cherry Tomatoes Can substitute with grape tomatoes
  • 1 cup Fresh Basil Can experiment with mint or parsley
  • 1 cup Small Mozzarella Balls (Bocconcini) Part-skim mozzarella for a lighter choice
For the Drizzle
  • 2 tbsp Balsamic Glaze A homemade reduction of balsamic vinegar works beautifully
  • 2 tbsp Olive Oil Opt for high-quality extra virgin olive oil
  • to taste Salt Use a light hand
  • to taste Pepper Enhances all flavors; adding Italian herbs can deepen the profile

Equipment

  • Toothpicks or small skewers

Method

Preparation Steps
  1. Wash and thoroughly dry the cherry tomatoes. For added flair, slice them in half and drizzle with olive oil. Let them soak in the flavor for a couple of minutes.
  2. Open the package of small mozzarella balls (bocconcini), gently drain any excess liquid, and pat dry to avoid sogginess.
  3. Assemble the bites by skewering a cherry tomato, followed by a fresh basil leaf, and then a mozzarella ball on each toothpick.
  4. Arrange assembled bites on a serving platter. Drizzle with olive oil and balsamic glaze, and season lightly with salt and pepper.
  5. Cover and refrigerate for about 10-15 minutes to let flavors meld together.
