Preparation of Chips and Salsa
- Mix sugar and cinnamon in a bowl until blended. Spray tortillas with cooking spray and coat one side with cinnamon-sugar mixture. Cut into 12 wedges.
- Preheat oven to 350°F (175°C). Spread tortilla wedges on baking sheet and bake for 11-12 minutes until golden and crispy.
- While chips bake, prepare the salsa: Peel and chop apples, mixing with lemon juice. Dice kiwis, strawberries, and optional raspberries, combining all in a bowl.
- Sprinkle brown sugar and add fruit preserves to salsa, mixing until coated. Adjust sweetness to taste.
- Remove chips from oven, let cool, and serve with fruit salsa either chilled or at room temperature.
