- Preheat your oven to 350°F (180°C) to ensure it's ready for baking the Gigantes Plaki.
- In your oven-safe dish, heat a generous splash of olive oil over medium heat. Add diced onion, carrot, and celery along with a sprinkle of salt and ground black pepper. Sauté these aromatic vegetables for about 7-10 minutes until they soften and become fragrant.
- Once the vegetables are perfectly softened, stir in minced fresh garlic and cook for an additional 30 seconds. Add garlic powder and red pepper flakes to deepen the flavor profile.
- Pour in the crushed tomatoes and tomato paste, stirring well to combine. Add vegetable stock or water, bay leaves, fresh dill, and sugar to taste.
- Carefully fold in the drained butter beans, mixing them well with the tomato sauce.
- Transfer your oven-safe dish to the preheated oven and bake for 40-50 minutes.
- After baking, carefully remove the dish from the oven and discard the bay leaves. Taste and adjust the seasoning as needed.
