Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, mint, garlic, oregano, salt, black pepper, and egg. Mix gently until combined.
- Divide the mixture into equal portions and roll them into meatballs about 1-1.5 inches in size. Place on the baking sheet.
- Drizzle olive oil over the meatballs. Bake for 20-25 minutes or until golden brown and cooked through.
- While the meatballs bake, rinse the rice under cold water. In a medium saucepan, combine rice and broth, bring to a boil.
- Cover and reduce heat, simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
- Fluff the rice with a fork and stir in lemon zest, lemon juice, dill, salt, and pepper.
- Serve lemon herb rice topped with the Greek Turkey Meatballs. Garnish with herbs if desired.
