- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper.
- In a mixing bowl, combine the all-purpose flour, granulated sugar, light brown sugar, and a pinch of salt. Add melted salted butter and pure vanilla extract, stirring until the mixture resembles coarse crumbs. Press two-thirds of the crumb mixture evenly into the bottom of the pan and bake for 15-20 minutes until golden brown.
- While the crust is baking, wash and slice fresh strawberries. Toss them with a bit of granulated sugar and flour in a bowl. Once the crust is out, layer the strawberry mixture evenly over it.
- Sprinkle the remaining crumb mixture over the strawberry layer evenly.
- Return the baking pan to the oven and bake for an additional 30-35 minutes, until the top is set and golden with bubbly juiciness.
- Allow the bars to cool completely on a wire rack for about an hour.
- In a medium bowl, whisk powdered sugar, heavy or light cream, and a splash of pure vanilla extract until smooth.
