  • 1 can coconut milk light coconut milk for lower-fat option
  • 1 tbsp soy sauce or tamari
  • 1 tsp lime juice fresh is best
For the Aromatics
  • 2 cloves garlic minced
  • 1 tsp ginger freshly grated
For the Base
  • 2 cups cooked rice jasmine, basmati, or cauliflower rice
For Seasoning
  • Salt and pepper to taste
For Garnish
  • Fresh cilantro or green onions can use parsley

Step-by-Step Instructions
  1. Heat 1 tablespoon of vegetable or coconut oil in a large skillet over medium heat until shimmering.
  2. Season 1 pound of diced chicken breasts with salt and pepper. Add to the skillet and cook for 5-7 minutes until golden brown and internal temperature reaches 165°F.
  3. Stir in 2 minced cloves of garlic and 1 teaspoon of freshly grated ginger. Sauté for 1 minute until fragrant.
  4. Add 1 can of coconut milk, 1 tablespoon of soy sauce, and 1 teaspoon of lime juice. Stir and simmer for 5-7 minutes until it thickens.
  5. Prepare your choice of rice according to package instructions. Cooking takes about 10-15 minutes. Fluff when finished.
  6. Spoon the coconut chicken mixture over the cooked rice and garnish with cilantro or green onions to serve.
