Step-by-Step Instructions
  1. Preheat your Blackstone griddle or a large skillet over medium-high heat for about 3–5 minutes. Add 1 tablespoon of oil and swirl to coat.
  2. Add sliced Yukon Gold potatoes to the griddle, sprinkle with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10–12 minutes until golden brown.
  3. Pour another tablespoon of oil into the cleared space and add sliced smoked sausage. Cook for about 5 minutes until browned.
  4. Incorporate chopped onion, red bell pepper, and zucchini into the mix. Stir and cook for an additional 5–7 minutes until tender but crisp.
  5. Taste the stir fry and adjust seasoning as necessary. Serve hot, optionally garnished with fresh parsley.
