- Preheat your Blackstone griddle or a large skillet over medium-high heat for about 3–5 minutes. Add 1 tablespoon of oil and swirl to coat.
- Add sliced Yukon Gold potatoes to the griddle, sprinkle with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10–12 minutes until golden brown.
- Pour another tablespoon of oil into the cleared space and add sliced smoked sausage. Cook for about 5 minutes until browned.
- Incorporate chopped onion, red bell pepper, and zucchini into the mix. Stir and cook for an additional 5–7 minutes until tender but crisp.
- Taste the stir fry and adjust seasoning as necessary. Serve hot, optionally garnished with fresh parsley.
