Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease an 8x8 or 9x9-inch baking dish with butter or non-stick spray.
  2. In a blender or mixing bowl, combine the strained full-fat cottage cheese and eggs. Blend until smooth and creamy, about 1-2 minutes.
  3. In a separate bowl, whisk together the almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder.
  4. Pour the blended cottage cheese and egg mixture into the dry ingredients. Gently mix until just combined.
  5. Fold in the mixed berries gently into the batter.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 35-40 minutes until golden and set in the center. A toothpick should come out clean.
  8. Let it cool for 20-30 minutes before slicing into squares.
