- In a medium saucepan, bring 1 cup of fresh water to a gentle simmer over medium heat. Add 4-5 fresh sage leaves and steep for about 5 minutes.
- Stir in 1 cup of fresh or frozen blackberries and return the mixture to a simmer for 2-3 minutes. Mash the blackberries to release their juices.
- Remove from heat and strain through a fine mesh sieve into a heatproof container. Mix in 2 tablespoons of maple syrup and the juice of half a lemon.
- Add 1 cup of cold water to the strained tea. Allow it to cool for about 15 minutes, then refrigerate until completely cold.
- Fill tall glasses with ice cubes and pour the chilled tea over the ice.
