Method
 

Cake Preparation
  1. In a large mixing bowl, sift together flour, sugar, baking powder, and salt.

  3. Gently fold the wet ingredients into the dry mixture and mix in chopped strawberries until just combined.
Baking

  2. Spoon the batter into each cavity of the tin, filling about two-thirds full.
  3. Bake for 12-15 minutes, until the tops are golden and a toothpick inserted comes out clean.

Glaze Preparation
  1. In a medium bowl, combine powdered sugar, lemon juice, and strawberry puree.
  2. Whisk until smooth and glossy, adding more lemon juice if too thick.
Glazing
  1. Once cooled, dip each cake bite into the glaze, allowing excess to drip back.
  2. Place glazed bites on a rack or parchment-lined tray, ensuring they don’t touch.
Serving
  1. Let the glazed bites rest at room temperature for about 30 minutes to set.
  2. Serve the same day for best freshness or store any leftovers in an airtight container.
